A simple madras curry paste substitute made with pantry spices and no mustard. This quick, allergy friendly recipe comes together in minutes and is perfect for adding rich flavor to homemade curry dishes.

Ingredients

  • 1 tbsp ground coriander
  • 1 ½ tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • ½ tsp turmeric
  • ¼ tsp cayenne pepper, increase cayenne to ½ tsp for more heat
  • 3 tbsp white vinegar

Instructions

  1. Mix the spices together in a small bowl.
  2. Add the vinegar one tbsp at a time until the mixture has formed a thick paste.
  3. Transfer any extra to a small jar with a lid and refrigerate to store.

Consistency
